Paleo Diet Recipes:
Baked Lemon Herb Salmon
Ingredients:
2 salmon filets
Juice and zest of 1 lemon
2 tablespoons of chopped fresh herbs (such as parsley, dill, or rosemary)
2 cloves of garlic, minced
Salt and pepper to taste
1 tablespoon of olive oil
Instructions:
Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a small bowl, combine the lemon juice, lemon zest, chopped herbs, minced garlic, salt, and pepper.
Place the salmon fillets on the prepared baking sheet and drizzle with olive oil.
Spread the lemon herb mixture evenly over the salmon.
Bake for 12-15 minutes or until the salmon is cooked through and flakes easily with a fork.
Serve hot and garnish with additional fresh herbs, if desired.
Paleo Cauliflower Fried Rice
Ingredients:
1 small head of cauliflower, riced (approximately 4 cups)
2 tablespoons of coconut oil
1 small onion, diced
2 cloves of garlic, minced
1 cup of mixed vegetables (carrots, peas, bell peppers, etc.)
2 tablespoons of coconut aminos (a paleo-friendly soy sauce alternative)
2 eggs, lightly beaten
Salt and pepper to taste
Optional toppings: chopped green onions, sesame seeds
Instructions:
In a large skillet or wok, heat coconut oil over medium heat.
Add the diced onion and minced garlic, and sauté until fragrant and translucent.
Add the mixed vegetables to the skillet and cook until they are slightly tender.
Push the vegetables to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until cooked through.
Add the riced cauliflower to the skillet and stir to combine with the vegetables and eggs.
Drizzle the coconut aminos over the mixture and continue to stir-fry for an additional 5-7 minutes until the cauliflower is cooked but still slightly crisp.
Season with salt and pepper to taste.
Serve hot, garnished with chopped green onions and sesame seeds, if desired.
Paleo Banana Almond Muffins
Ingredients:
2 ripe bananas, mashed
3 eggs
1/4 cup of almond butter
2 tablespoons of coconut oil, melted
1/2 cup of almond flour
1/4 cup of coconut flour
1 teaspoon of baking powder
1/2 teaspoon of cinnamon
Pinch of salt
Instructions:
Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
In a large bowl, combine the mashed bananas, eggs, almond butter, and melted coconut oil. Mix until well combined.
In a separate bowl, whisk together the almond flour, coconut flour, baking powder, cinnamon, and salt.
Add the dry ingredients to the wet ingredients and stir until a smooth batter forms.
Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.
Bake for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
Allow the muffins to cool for a few minutes in the pan before transferring them to a wire rack to cool completely.
